ABOUT Goan Baaht cake RECIPE

This is a traditional Goan recipe made during christmas. It usually contains lots of eggs but i have tried to make it eggless.

Ingredients Serving: 8

  1. Rawa/ semolina - 1 cup
  2. Sugar - 1 1/2 cup
  3. Coconut - 2 cups grated
  4. Cardamom pwd - 1 tsp
  5. Baking pwd - 1 1/2 tsp
  6. Butter - 3 tbsp, soft
  7. Flaxseed pwd - 3 tbsp
  8. Almonds and raisins optional

Instructions

  1. Take flaxseed pwd in a bowl and pour around 9 tbsp of water and keep aside for 15 mins. It should become like a paste.
  2. Take coconut and a quarter cup of water and grind slightly.
  3. In a separate bowl, mix rawa, sugar, baking pwd and butter.
  4. Add the coconut and mix well.
  5. Mix in the flaxseed paste and cardamom pwd. Let it rest for a minimum of 4 hrs or overnight.
  6. If adding nuts or dry fruits, can be added at this time.
  7. Preheat oven to 180 C for 10 mins. Pour the batter in greased tin and bake for around 40-45 mins, until skewer inserted comes out clean.
