ABOUT Triangle Curd Cassata RECIPE

A unique use of Curd for preparing a unique flavoured Cassata. A perfect combination of beetroot, fruits like banana, grapes, chikoo and a chocolate flavour has been done. An appealing chilled sweet which is healthy with different flavours.

Ingredients Serving: 2

  1. Curd, 2 cups
  2. Malai, 3/4cup
  3. Sugar powder, 1+ 1/2cup or to taste
  4. Beetroot juice, 1/2cup
  5. Banana,grapes,chikoo, 1/2 cup, chopped
  6. All purpose flour, 50gram
  7. Cocoa powder, 1tsp
  8. Baking powder, 1/2tsp
  9. Baking soda, 1/4tsp
  10. Milk 1/4 cup
  11. Vanilla essence, few drops
  12. Dry fruits, Almonds, cashews, raisins, 2tsp chopped

Instructions

  1. Take out 1tsp of curd and 30gram sugar powder in separate bowl and whisk and keep aside until required.
  2. Take rest of the curd and add malai, left sugar powder and mix everything well.
  3. Now divide this mixture into two parts.
  4. To the one part add beetroot juice and mix well and keep in freezer safe container and let it freeze and set.
  5. To the other part add all the chopped fruits i.e. banana, grapes and chikoo and mix well and keep in refrigerator.
  6. When the beetroot mix gets well set then pour the fruits mixture over it and let it also get set.
  7. Meanwhile let's prepare the third layer which would be a cake as it's a must for cassata.
  8. Take all purpose flour and add baking powder, baking soda and mix.
  9. Now add cocoa powder to it and mix well.
  10. Take the curd sugar mixture which was kept aside earlier and add vanilla essence to it.
  11. Now mix the curd mixture with all purpose flour mixture and with help of milk prepare a smooth batter.
  12. Now pour it into a greased microwave safe dish and cook for 5-7 minutes or until pin comes out clean.
  13. Let it cool.
  14. When the previous two layers are almost set put the cake piece over it.
  15. Garnish with chopped dry fruits.
  16. Your delicious Curd Cassata is ready. Enjoy.
  17. Note- I have used Express Freezer option of my refrigerator and thus my Curd Cassata was ready within an hour.
