ABOUT Eggless Mango Sooji Cake RECIPE

A must try two step easy Mango curd eggless Sooji cake.

Ingredients Serving: 10

  1. 1 cup chopped alphanso mangoes
  2. 1/2 cup curd or more as required
  3. 1 and 1/2 cup fine semolina
  4. 1/2 cup sugar or according to sweetness of mangoes
  5. 1/4 cup ghee or oil
  6. 1 & 1/2 teaspoon baking powder
  7. Pinch of salt
  8. Handful of nuts of your choice, slivered
  9. 1 teaspoon cardamom powder or vanilla essence

Instructions

  1. Keep all ingredients ready at room temperature.
  2. Puree mangoes in a mixer.
  3. In a large mixing bowl mix all ingredients except some slivered Nuts to decorate on top.
  4. Leave this mixture covered for 30 minutes for semolina to absorb all the liquid.
  5. Just after 20 minutes have passed, preheat oven at 180C at room temperature. Grease cupcakes moulds.
  6. After half an hour check the batter. If it is very thick add some more beaten curd or liquid part of curd (at room temperature) to adjust consistency.
  7. Pour in greased cup cake moulds and sprinkle slivered nuts on top.
  8. Bake for 20 minutes or until toothpick inserted comes out clean.
  9. Remove from oven and keep on a wire rack for 10 minutes to cool.
  10. Enjoy warm or chilled.
