Ingredients Serving: 4

  1. Sooji [semolina] 1/2 cup
  2. besan [gram flour] 1/2 cup
  3. Dahi 1 cup
  4. Baking soda 2 pinch
  5. Haldi 2 pinch
  6. Oil 2 tbsp
  7. Sugar 2 tsp
  8. Salt
  9. Lemon juice 2 tsp
  10. Chopped green chilli 2
  11. Chopped coriander
  12. Eno 1
  13. For shallow fry...
  14. Oil 1 tbsp
  15. Mustard seed 1tsp

Instructions

  1. Mix all the ingredients together in a bowl except the eno to form a batter, add required amount of water to form the thick smooth batter. Rest this for 30 minutes.
  2. Now grease the idli mould and heat the steamer.
  3. Now mix the eno into the batter, mix and pour this into the cavities of the idli mould.
  4. Now steam these for 7-8 minutes.
  5. Let them cool a bit and then demould. For the tempering, heat a pan with some oil. Add the mustard seeds.
  6. Now add the idli dhoklas into the pan and toss them.
  7. Shallow fry them and serve hot with a chutney of your choice.
