ABOUT Lauki yakhni(no onion, no garlic) RECIPE

This is a typical Kashmiri dish made from bottle gourd prepared in yoghurt based gravy.

Ingredients Serving: 2

  1. Bottle gourd 200 grams
  2. Whisked curd 1 cup
  3. Mustard oil 2 tablespoon
  4. Cumin seeds one teaspoon
  5. Asafoetida 1/4 teaspoon
  6. Cloves 4
  7. Cinnamon 1 inch
  8. Black pepper 5
  9. Black cardamom 1
  10. Dry ginger powder half teaspoon
  11. Fennel seed powder 1 teaspoon
  12. Salt to taste
  13. Fresh coriander to Garnish

Instructions

  1. Wash,peel and chop bottle gourd into long pieces. You can also chop a thin bottle gourd into round pieces.
  2. Take 2 tbsp mustard oil in a pan and fry the bottle gourd pieces in it.
  3. Fry the bottle gourd pieces till they turn golden.
  4. Remove from pan and keep on absorbent paper.
  5. Add cumin seeds in the oil.
  6. Crush the dry spices into a coarse powder.
  7. When cumin seeds splutter add the dry spices powder and asafoetida.
  8. Add whisked curd gradually.Keep gas at low and keep stirring.
  9. Let it simmer.Add fennel seed powder and ginger powder.
  10. Mix well and add the fried bottle gourd pieces.
  11. If you want you can add water to make the gravy thin.Add salt.
  12. Cover and simmer for 5 minutes .
  13. Garnish with fresh coriander and serve hot with rice,biryani or roti.
