Nice one.
Heat oil, add mustard seeds, cumin seeds, green chilli, curry leaves and onions. Fry till onions turn brown.
Add grated carrots and stir for 30 seconds
Add ginger garlic paste and fry till raw smell is gone
Add the tomato and cook till they turn mushy
Add turmeric powder, coriander powder, chilli powder, garam masala powder and curd. Fry for a minute
Add water and bring to boil
Add the coriander leaves, salt and sugar, lemon juice and roasted sevai.
Mix well and cook on high flame for two minutes until the water evaporates
Now cover the pan, turn the flame to low and cook for 5 minutes and turn off the flame. Add ghee and cover the pan. Let it rest for 2 minutes.
Mix well and serve it hot with pickle or chutney or raita or tomato sauce
