ABOUT Gosht Khada Masala...(Mutton gravy with whole spices) RECIPE

As the name suggests, it is made with whole garam masalas and is a popular dish in the Indian Sub Continent, mainly North India, Afghanistan and Pakistan. Whole spices are used in this flavourful gravy that goes well with naans. A spicy and a hot gravy that is certainly not for the weak hearted. However the amount of spice can be reduced according to one's own liking that suits your families. Tomatoes can be added if desired and are purely optional. This one actually gives your tastebuds a kick with it's super spicy rustic flavour and aroma. Happy Cooking Guys !!!!!!!!!!

Ingredients Serving: 6

  1. Mutton bone-in 1 kg
  2. Salt 1 1/2 tbsp
  3. Curd 400 gm
  4. Ginger Garlic paste 2 tbsp
  5. RED CHILLI POWDER 1 TBSP
  6. Blackpepper powder 1 tsp
  7. Cinnamon sticks 2
  8. Cloves 8
  9. Cardamoms 5
  10. Caraway seeds 1 tsp
  11. Cubeb pepper 7-8
  12. Cumin seeds 1 tsp
  13. Onions sliced 2
  14. Garam masala powder 1/2 tsp
  15. Oil 2/3 cup
  16. curry leaves 1/4 cup

Instructions

  1. Heat oil in a pressure cooker.
  2. Add curry leaves and all the khada masalas (whole masalas) to it.
  3. Saute them all for half a minute.
  4. Add sliced onions now.
  5. Also add ginger garlic paste.
  6. Saute until the onions are pink in colour and the raw smell has completely diminished.
  7. Add the clean mutton pieces along with salt to the cooker at last.
  8. Pressure cook it for 10-12 whistles or until done.
  9. Open the lid after the pressure has settled down.
  10. Sprinkle garam masala and add beaten curd to it after lowering the heat.
  11. Cover and simmer until the raw smell vanishes and the gravy thickens.
  12. The thickness of the gravy depends upon one's own choice.
  13. Serve it hot with naans for a delicious dinner on any preferred day.
