ABOUT Lunchbox creamy curd rice ( Travel friendly ) RECIPE

Creamy version of curd rice which stays fresh for long hours . Best during travels . This is my Mom’s recipe . She used to pack this delicious curd rice for our lunch . What a divine taste when eaten along with potato fry .

Ingredients Serving: 4

  1. Parboiled Rice 3 cups
  2. Water 8 cups
  3. Whole milk 1 large glass
  4. Fresh yogurt 200 grams
  5. Fresh cooking cream 3 tablespoons
  6. Salt 1.5 teaspoons
  7. Butter 1 teaspoon
  8. Mustard seeds 1 teaspoon
  9. Cumin seeds 1/2 teaspoon
  10. channa dal 1 teaspoon
  11. Green chilli 1
  12. Hing a big pinch
  13. Curry leaves 2 sprigs

Instructions

  1. Cook 3 cups rice in 7 to 8 cups water . Cook till mushy .
  2. Cool the rice completely .
  3. Now mash the rice with a heavy spatula .
  4. Add boiled and cooled milk .
  5. Add a cup of fresh yogurt .
  6. Mix gently . Add salt .
  7. Mix till evert grain is coated in yogurt.
  8. Add fresh cream . Toss gently . The curd rice should look creamy and glossy.
  9. Do Tadka with little butter , mustard seeds . cumin seeds , channa dal , hing , curry leaves , green chillies .
  10. Pour the tadka on the curd rice .
  11. Mix completely .
  12. Finally add chopped fresh green grapes . This is optional . Adding sweet grapes enhances the taste of the curd rice .
