For Rice whole garam masala, 700 gram soaked basmati rice
2 bay leaves
1 cinnamon stick
3 to 4 green cardamom
4 to 5 cloves
8 to 10 chopped mint leaves
1/4 cup chopped corriender leaves
4 to 5 slit green chillies
Salt as per taste
For Dum, 2 tbsp desi ghee
Saffron in hot milk
1/4 tsp orange red colour
Fried onion
Chopped Corriender leaves
Chopped mint leaves
1 and 1/2 tbsp desi ghee
Instructions
Take green chilli,garlic and ginger in a mixer jar and make fine smooth paste of this and keep aside this
Reserve some fried onion,and take remaining onion in mixer jar and also make fine smooth paste of this
Take all garam masala ingredients in a mixer jar and make fine garam masala powder of this
Now add ginger,garlic and chilli paste, fried onion paste, whisked yogurt, salt, turmeric powder, chilli powder, chopped corriender and mint leaves and fresh grind masala in mutton pieces and mix well
Keep aside this masala mix mutton for marinate atleast 4 hours for more taste
After 4 hours add some water in a marinated mutton and cook it on low flame till tender, now add lemon juice and mix well and switch of gas
When it's done make well in centre in mutton pot adjust beetle leaf arrange a burn coal and pour some desi ghee over the coal and immediately cover the mutton pan with lid for soaked all smoke for 4 to 5 minutes
Now take deep vessels and fill water at 3/4 of vessels,and add whole garam masala,chopped mint and corriender leaves, slit green chillies and salt and wait to boil in water
When boil in water add soaked basmati rice for cook, When rice 75% done, when done remove excess water and transfer the rice in flat big plate for cool
For layring, melt some ghee in heavy bottom pan, layer the half of cooked rice,now layer the smoky mutton masala now again layer of remaining cooked rice
Pour saffron milk, desi ghee,orange red food colour,chopped mint and corriender leaves and fried onion over the top
Now sealed the vessels with dough and dum the biryani on low flame for 15 to 20 minutes
Now Smoky Dum Biryani is ready to serve
Serve the hot for more taste
