Sindhi Biryani is a special meat and rice biriyani dish originating from the Sindh province of Pakistan.Owing to its popularity,it forms one of the most consumed dishes of Pakistani cuisine and Sindhi cuisine.

Ingredients Serving: 4

  1. 1/2 cup refined oil
  2. 4 midium sliced onion
  3. 2 tablespoon ginger garlic paste
  4. 700 grams chicken
  5. 10 black pepper corns
  6. 2 star anise
  7. 2 cinnamon sticks
  8. 7-8 cloves
  9. 1 black cardamom
  10. 7-8 green cardamom
  11. 1 teaspoon cumin seeds
  12. 1 teaspoon red chilli powder
  13. 1/2 teaspoon turmeric powder
  14. 1 teaspoon garam masala powder
  15. 1 teaspoon cumin powder
  16. 1 teaspoon coriander powder
  17. 1 teaspoon salt
  18. 2 bay leaves
  19. 3/4 cup yogurt
  20. 1 medium tomato(cut into cubes)
  21. 4-5 green chillies
  22. 3-4 plums
  23. Green coriander handful
  24. Mint leaves handful
  25. 2 tablespoon lemon juice
  26. 1/2 kg basmati rice (soaked and boiled with whole spices & salt)
  27. 4 boiled potatoes
  28. 1-2 tablespoon water
  29. 1 tablespoon ghee
  30. Orange and tomato slices for garnishing
  31. 1/2 teaspoon yellow food colour

Instructions

  1. Marinate chicken pieces with salt, lemon juice and turmeric powder for 10 minutes.
  2. In a kadai,add oil, onion and fry until golden brown, take out half quantity of fried onion & set aside.
  3. In remaining fried onion,add ginger garlic paste and mix well.
  4. Add chicken and fry until chicken changes colour.
  5. Add black pepper corns,star anise, cinnamon stick, cloves, black cardamom, green cardamom,cumin seeds,red chilli powder, turmeric powder,garam masala powder, coriander powder, cumin powder,salt,bay leaf and tomato cubes,stir well & cook for 2 minutes.
  6. Now add yogurt and mix well.
  7. Add green chillies and plums,stir well.
  8. Now add green coriander leaves and mint leaves,give a nice stir.
  9. Cover and cook for 6-8 minutes.
  10. Take out half quantity of cooked chicken & gravy and set aside.
  11. Spread fried onion on rest of the gravy.
  12. Now add a layer of cooked rice,place chicken pieces along with little gravy adding 1/2 teaspoon lemon juice and fried onion over it.This is how first layer of sindhi biryani is done.
  13. Now prepare last layer with rest of the rice.Sprinkle rest of the gravy,fried onions, yellow food colour and ghee with a spoon.
  14. Now cover the kadai with an aluminium foil and close it with the lid.Let it cook on a low flame For 10 minutes.
  15. Open the lid before serving.
  16. Take some portions of biryani in a plate.
  17. Garnish with some orange and tomato slices.
  18. Sindhi biryani is ready to serve.
