ABOUT Spicy Kakarakaya Kaaram RECIPE

This is a famous dish from Guntur Kakarakaya, Karela, Bitter gourd whatever we call it is much avoided vegetable from kids to adults but it has many medicinal uses and health benefits beneficial for diabetic people. Bitter Gourd is a rich source of energy, Dietary Fiber, Vitamin A, Vitamin B6, Vitamin C, Vitamin E, Vitamin K, Folate, Sodium, Potassium and Calcium.

Ingredients Serving: 4

  1. Kakarakaya - 5, cut into thin circles (about 4 cups)
  2. Chopped onions - 2 cups
  3. Red chilli powder - 3 tbsp
  4. Salt as per taste
  5. Turmeric 1 tsp
  6. Garlic cloves 4
  7. Grated Jaggery - 2 tbsp (Substitute with sugar also)
  8. Oil - 6 tbsp
  9. Curry leaves - 20
  10. Cumin seeds - 1 tsp

Instructions

  1. Grind garlic, red chilli powder with salt and keep aside.
  2. Heat oil in a wide pan, add curry leaves and cumin seeds. Let them splutter.
  3. Add karela slices with a little salt and turmeric. Saute for 10 minutes on medium heat.
  4. When the karela starts changing colour, add chopped onions and fry for 15 minutes until karela pieces turn brown in colour.
  5. Add garlic, red chilli powder mix and add jaggery. Fry for 2 minutes, turn off heat.
  6. Kakarakaya Kaaram is ready to serve. You can store it upto 4-5 days in the refrigerator.
