ABOUT Veg Bunny chow RECIPE

Ingredients Serving: 4

  1. Chickpeas/chhole 1 cup
  2. Carrots 1/4 cup
  3. Capsicum 1/4 cup
  4. Onions 1/4 cup
  5. Tomato puree 1/2 cup
  6. Potatoes 2
  7. Ginger chilli paste 1 tsp
  8. Oil 1 tbsp
  9. Cumin seeds 1 tsp
  10. Star anise 1
  11. Bayleaf 1
  12. Cinnamon 1 inch piece
  13. Turmeric 1/2 tsp
  14. Red chilli powder 1 tsp
  15. Coriander powder 1 tsp
  16. Garam masala 1/2 tsp
  17. Salt to taste
  18. Lime juice 1 tsp
  19. Coriander to garnish
  20. Buns 4

Instructions

  1. Boil the chickpeas and potatoes.
  2. Chop the vegetables.
  3. Take oil in a pan.Add cumin seeds,star anise,cinnamon and bay leaf.
  4. Add ginger garlic paste.
  5. Add finely chopped onions.Saute for a minute.
  6. Add chopped carrots and Capsicum.
  7. Add salt and 2 to 3 tablespoons of water. Cover and cook for 4 to 5 minutes.
  8. Add the tomato puree and mix well.
  9. Add all the dry spices.
  10. Saute and cook well till oil releases.
  11. Add the boiled chickpeas.
  12. Mix well and add about 2 cups of water.
  13. Add boiled and cubed potatoes.
  14. Cover with lid and cook for 8 to 10 minutes.The gravy should be thick.
  15. Lightly mash some chickpeas.Add some lime juice and the veg filling for bunny chow is ready.Add some coriander.
  16. Keep the filling aside.
  17. Now take a burger bun or dinner roll.
  18. Make a square indentation with a sharp knife by piercing half way through.
  19. Scoop out the square part and make a bowl from bun.
  20. Fill the filling in this bread bowl and serve with some onion tomato salsa.
