ABOUT Kasoori Methi Chicken Fried Rice.... RECIPE

An amazingly delish idea by me this festive season for you all. The aromatic rice speaks for itself when it is served to your guests. Made totally my way using spices from my pantry of my choice and liking. Use any number of veggies you wish for this. A complete one pot meal that can be relished on it's own or with a simple mint raita as i did. Stunningly beautiful and aromatic due to the spices used that adorns your dining table with it's neat presentation and looks. Happy Iftaar Time !

Ingredients Serving: 10

  1. Chicken breasts large 5
  2. Ginger Garlic paste 2 tbsp
  3. Salt 2 tbsp (depending upon choice)
  4. Red chilli flakes 2 tbsp
  5. Kasoori methi ciba spices 3 tbsp
  6. Cumin powder 1 tbsp
  7. Garam masala 1 tsp
  8. Pav bhaji masala ciba spices 2-3 tbsp
  9. Black pepper powder 1 tbsp
  10. Coriander leaves chopped 1/4 cup
  11. Capsicum finely chopped 2 cups
  12. Carrots finely chopped 1 cup
  13. Green Peas 1 cup
  14. Onions chopped 2
  15. oil 5-6 tbsp
  16. Maggi seasoning cubes 2 (optional)
  17. Caraway seeds (Shah jeera) 1 tsp
  18. Rice 3/4 kg

Instructions

  1. Soak rice in enough water for 20 minutes.
  2. Cook al dente with caraway seeds and maggi seasoning cubes.
  3. Also add salt as per taste and a tablespoon of lemon juice for a fluffier rice.
  4. In a cooking pot, heat oil and saute onions with ginger garlic paste until light pinkish in colour.
  5. Clean chicken breasts and cut into bite sized cubes.
  6. Add these to the pot along with the other spices one by one.
  7. Also add kasoori methi to it.
  8. Mix well and saute until the chicken is done.
  9. Also add the veggies of your choice now.
  10. Do not cook them much as they should retain the crunch.
  11. Adjust spices according to taste.
  12. Cover and simmer for 15-18 minutes on a medium high heat.
  13. Add in cooked rice and mix well taking care not to break the grains.
  14. Garnish with chopped coriander leaves and serve hot with mint raita as i did to your family and guests at iftaar or dinner that follows iftaar.
