ABOUT Prawn and Pomelo salad RECIPE

An absolutely delicious salad! Freshness exudes here and your palate won't know what to do with all the exciting flavors exploding in your mouth!

Ingredients Serving: 4

  1. 200 grams medium sized prawns, steamed
  2. 100 grams tomatoes, diced
  3. 100 grams spring onions, sliced
  4. 50 grams shredded coconut
  5. 1 medium sized Onion, sliced
  6. 100 grams pomelo peeled
  7. 1 stalk lemon grass, only the soft part
  8. For the dressing
  9. 1 tbsp red chili paste
  10. 2 tbsp Extra virgin olive oil
  11. Handful of shredded basil
  12. 2 tbsp jaggery water
  13. 2 tbsp roasted peanut/hazelnut
  14. Salt to season
  15. 1 tbsp lemon juice

Instructions

  1. In a dry mixing bowl, whisk the oil, jaggery water, lemon juice and chilli paste add the shredded basil.
  2. Season with salt in another bowl mix all the ingredients for the salad, add the dressing and give it a good massage.
  3. Serve with a sprinkling of roasted peanut and hazelnut.
