ABOUT Methi Chaman RECIPE

Methi chaman is one of a kind ..so subtle..creamy and luscious green in color.The Green makes me hungry and crave for more n more ..eating this gut n mind both feel happy as its a guilt free food... I very much remember it was on our first anniversary that i tasted this yumminess...When sunil ordered this along with jeera rice ...I was like Methi what ??? And he was the one who insisted me to taste this, really thankful to him and glad that I did taste or else i would have missed it a big time. Its so true...name has nothing to do with appearance!!! In this case taste...Lol !!

Ingredients Serving: 5

  1. 1 cup packed Fenugreek /Methi leaves(Sorted n washed )
  2. 100 gms or 2 1/2cups packed spinach(Sorted n washed )
  3. 1/2 cup coriander leaves
  4. 1/4 cup frozen / fresh peas (optional )
  5. 1 finely chopped onion
  6. 200 gms Paneer cut into bite size pieces and soak in water until use
  7. 5 to 6 Green chiilies finely chopped( depending on spice intake )
  8. 3 large cloves garlic crushed
  9. 1/2 tsp ginger garlic paste
  10. 1 tbsp coriander powder
  11. 1 tsp cumin powder
  12. 1 tsp garam masala powder
  13. Salt to taste
  14. 1/8 tsp turmeric
  15. 2 tbsp Oil
  16. 1 tbsp Butter
  17. 1 tsp sugar
  18. 2 Cardamom pods
  19. An inch piece cinnamon
  20. 4 cloves
  21. 1 tsp shahi jeera
  22. 2 to 3 tbsp fresh cream
  23. Coriander for garnish

Instructions

  1. Half fill a deep pan with water and bring it to a boil..once boiling add the spinach and Methi leaves, boil this for 10 mins now add the coriander leaves and simmer for few seconds, later drain the water and cool. Once cooled grind into a fine paste and set aside.
  2. In a pan add the oil/butter n heat, once warm add the whole Garam masala and shahi jeera, let the jeera splutter now add in chopped onions saute until brown, now add in crushed garlic and saute until garlic turns golden.
  3. Next goes in ginger garlic paste and green chillies saute this till the raw smell from ginger and garlic evaporates..
  4. Later add in a pinch of turmeric , ground paste and sugar, saute until the mixture dries up n oil starts oozing out.
  5. Now add salt, cumin powder, coriander powder, garam masala powder along with some water, stir well and cook it covered for 5 mins ..
  6. Next add in the peas , paneer and few coriander leaves, stir well n check the seasoning alter if salt is required. Now add the cream, stir cover and cook for few mins, this helps the paneer to soak up the gravy.
  7. Now Turn off the heat. And its ready to be served.
