ABOUT Paneer paturi RECIPE

Patauri is a very popular dish cooked in fresh banana leaves or pumpkin leaves. Basically mustard paste is the base and paneer is wrapped in banana leaf and then either you can steam or roast. It's a very aromatic and flavourful recipe of paneer.

Ingredients Serving: 2

  1. Paneer 200gm
  2. Yellow mustard seeds 4tbsp
  3. Poppy seeds 2tsp
  4. Grated coconut 1tbsp
  5. Green chilli 2-3
  6. Turmeric powder 1/2tsp
  7. salt as per taste
  8. Sugar 1 pinch
  9. Lemon juice 2tsp
  10. Mustard oil 3tbsp
  11. Banana leaves 2
  12. Thread to tie

Instructions

  1. Soak mustard seeds and poppy seeds for 10mins and grind to a smooth paste mixing with coconut and green chilli.
  2. Transfer this paste into a mixing bowl and add salt, sugar, turmeric powder and mix well.
  3. Cut paneer into cubes.
  4. Add the paneer cubes into the mixture and marinate for 10-15mins.
  5. Heat a tawa, and on medium heat, gently warm the banana leaves (this keeps them from breaking as you fold them).
  6. Now place the marinated paneer chunks in the center of banana leaf and add the remaining marinade on it, slit green chillies, add lemon juice and top it with a generous amount of mustard oil. 
  7. Heat a non-stick pan and drizzle oil all over.
  8. Fold the banana leaves, making a tight parcel, and secure with a cotton thread.
  9. Place the banana parcels in the pan, and cover.
  10. Cook on one side for 4 mins, and then flip over and cook for another 3 to 4 mins, or until the banana leaves begin to brown and sizzle.
  11. Take off the heat.
  12. Discard the threads from the parcels and you can transfer the paneer pieces into a serving plate or can have it directly from the leaf.
  13. Serve paturi with hot steamed rice.
