ABOUT Chicken ghee gravy RECIPE

Spicy and flavourful chicken curry which is made using some spicy toasted spice powders. The ghee adds a nice flavour to the chicken curry

Ingredients Serving: 6

  1. Ghee - ¼ cup
  2. Chicken - ½ kg
  3. Salt to taste
  4. Turmeric Powder - 1 tsp
  5. Yogurt / Curd - ½ cup
  6. Onion - 2 large sliced thinly
  7. Green Chillies - 2 slit
  8. Curry leaves - 2 sprig
  9. Tomatoes - 2 chopped finely
  10. Tamarind pulp - 1 tblsp
  11. Water as needed
  12. Salt to taste
  13. Garam Masala Powder - 1.5 tblsp
  14. Coriander leaves a handful finely chopped
  15. TO DRY ROAST & GRIND:
  16. Kashmiri Chilli Powder - 2 tblsp
  17. Coriander Powder - 2 tblsp
  18. Turmeric Powder - 1 tsp
  19. Cumin Powder - 2 tsp
  20. Garlic - 6 to 8 cloves

Instructions

  1. Take chicken, yogurt, salt and turmeric powder in a bowl and mix well. Set aside for 30 mins.
  2. Take spice powders in a dry pan and toast for 2 to 3 mins. Take it in a blender and add garlic. Grind to a smooth puree.
  3. Heat ghee in a pan, add in curry leaves.
  4. Add onions, chillies and salt and saute till golden.
  5. Add in chicken and mix well. Cook for 10 mins. Add in tomatoes and cook till mushy.
  6. Now add in the ground masala, tamarind and water and mix well. Cook for 10 to 15 mins.
  7. Add garam masala powder and mix well. Cook till oil separates from the curry.
  8. Add in coriander leavers and mix well. Serve
