Ingredients Serving: 2

  1. Cucumbers skin peeled and grated 1/2 kilogram
  2. Sweetened Condensed milk 1/2 tin
  3. Cardamom powder 1/2 teaspoon
  4. Ghee 4-5 tablespoons
  5. Walnuts 10
  6. Golden raisins 10
  7. Pistachios chopped 2 tablespoons

Instructions

  1. Heat 1 tablespoon ghee . Roast the chopped walnuts and raisins . Transfer to a plate.
  2. Wash , peel and discard the skin of the cucumbers . Grate cucumbers and add into the melted ghee .
  3. Sauté till there is no moisture in high flame . Keep stirring.See that cucumbers doesn’t get burnt.
  4. When cucumbers turn dry . Add 1/2 tin condensed milk .
  5. Keep stirring continuously till the halwa thickens . Add 1/2 teaspoon cardamom powder .
  6. Add 3 tablespoons ghee gradually while stirring . Halwa will start floating . Will look glossy .
  7. One big No sticky mass is the right consistency . Add the roasted nuts .
  8. Cucumber halwa is ready . Garnish with pistachios .
  9. Enjoy .
