This is a chettinad special clear soup which is a quick recipe. Made using dal water and cauliflower, it is a good appetiser.

Ingredients Serving: 4

  1. Cauliflower florets 100 gms
  2. Tuvar dal water
  3. Onion 1
  4. Green chillies 2
  5. Tomato 1
  6. Pepper 1 teaspoon
  7. Fennel seeds 1/2 teaspoon
  8. Jeera 1/2 teaspoon
  9. Bay leaves 2
  10. Curry leaves few
  11. Turmeric powder 1/2 tsp
  12. Salt accordingly

Instructions

  1. WASH AND CHOP THE CAULIFLOWER INTO SMALL PIECES. SLICE THE ONIONS. CHOP THE TOMATOES FINELY. EXTRACT TUVAR DAL WATER ONLY WHILE COOKING FOR DAL
  2. IN A HANDI ADD 2 TEASPOONS OF GHEE
  3. ADD BAY LEAVES AND JEERA
  4. ONCE JEERA SPLUTTERS ADD WHOLE BLACK PEPPER
  5. ADD THE GREEN CHILLIES AND SLICED ONIONS
  6. GIVE IT A STIR
  7. ADD THE TOMATOES
  8. ADD TURMERIC AND SALT
  9. COOK COVERED TILL TOMATO TURNS MUSHY
  10. ADD IN THE CAULIFLOWER FLORETS
  11. ONCE CAULIFLOWER IS HALF COOKED ADD COARSELY CRUSHED FENNEL
  12. ADD IN THE DAL WATER
  13. ALLOW IT TO BOIL FOR 5 MINS
  14. CHETTINAD CAULIFLOWER SOUP IS READY TO SERVE
