ABOUT Sweet Potato Koftas dipped in Beetroot Gravy RECIPE

A very unique combination of sweet potatoes with beetroot. Beetroot gives an amazing taste and color to the gravy as compared to those casual prepared gravies. A totally different and healthy version. Adding of raisins, carrot and sweet corns gives twist to the flavour of sweet potatoes.

Ingredients Serving: 4

  1. For preparing koftas-
  2. Sweet Potatoes, 5-6
  3. Carrot, 1/4 bowl, chopped
  4. Sweet Corns, 1/4 bowl
  5. Bread slice, 2
  6. Black pepper powder, 1/2 tsp
  7. Tandoori chicken masala, 1tsp
  8. Salt, to taste
  9. Cumin powder, 1/2tsp
  10. For gravy-
  11. Beetroot, 1/2 piece
  12. Peanuts, 1/4 bowl
  13. Curd, 1 bowl full
  14. Gram flour, 1tsp
  15. Mustard seeds, 1tsp
  16. Curry leaves, 1sprig
  17. Red chilli powder, 1/2tsp
  18. Tandoori chicken masala, 1tsp
  19. Salt, to taste
  20. Oil, for frying
  21. Raisins, few, for stuffing(optional)

Instructions

  1. INGREDIENTS FOR KOFTAS- SWEET POTATO, CARROT, SWEET CORN, BREAD, CUMIN POWDER, BLACK PEPPER POWDER, SALT AND TANDOORI CHICKEN MASALA(VEG)
  2. WASH THE SWEET POTATOES AND KEEP IN MICROWAVE SAFE BAG
  3. MICROWAVE THE SWEET POTATOES FOR 6 MINUTES. THEY WILL TURN SOFT
  4. MEANWHILE KEEP WATER IN A PAN FOR BOILING AND ADD CHOPPED CARROTS.
  5. ADD IN SWEET CORNS
  6. COOK THEM 90%. THEY WILL TURN SOFT.
  7. CARROTS, SWEET CORNS AND SWEET POTATOES ARE BOILED. PEEL THE SWEET POTATOES THEN
  8. MASH THE SWEET POTATOES.
  9. ADD IN CARROTS AND SWEET CORN.
  10. ADD BLACK PEPPER POWDER.
  11. ADD TANDOORI CHICKEN MASALA.
  12. ADD SALT
  13. MIX EVERYTHING WELL
  14. ADD IN CUMIN POWDER AS WELL AND MIX AGAIN
  15. BREAK THE BREAD INTO PIECES
  16. ADD THE BREAD PIECES TO THE SWEET POTATOES MIXTURE AND MIX WELL. THIS WILL HELP IN BONDING WELL.
  17. TAKE SMALL AMOUNT OF MIXTURE IN HAND AND FLATTEN THEN ADD RAISINS(OPTIONAL). MAKE BALL OUT OF IT.
  18. SIMILARLY PREPARE ALL THE KOFTAS
  19. KOFTAS ARE SHAPED. HEAT OIL MEANWHILE FOR FRYING.
  20. FRY THE KOFTAS
  21. COOK UNTIL GOLDEN BROWN.
  22. INGREDIENTS FOR BEETROOT GRAVY- BEETROOT, PEANUTS, CURD, GRAM FLOUR, CURRY LEAVES, MUSTARD SEEDS, RED CHILLI POWDER, TANDOORI CHICKEN MASALA AND SALT
  23. ADD LITTLE OIL IN A NON STICK PAN AND ADD THE PEANUTS.
  24. ADD IN CHOPPED BEETROOT PIECES. COOK FOR 1-2 MINUTES.
  25. PUT THE SAUTEED PEANUTS AND BEETROOT MIXTURE IN A GRINDER. ADD 1 BIG SPOON CURD AND GRIND IT.
  26. COARSE PASTE IS READY.
  27. IN THE SAME PAN ADD LITTLE MORE OIL AND PUT MUSTARD SEEDS AND CURRY LEAVES AND LET MUSTARD SEEDS SPLUTTER.
  28. ADD IN THE PREPARED PASTE OF BEETROOT AND PEANUTS.
  29. ADD GRAM FLOUR TO THE CURD AND MIX.
  30. ADD THE CURD MIX TO THE PAN AND SAUTE WELL.
  31. ADD RED CHILLI POWDER, SALT. MIX WELL.
  32. ADD TANDOORI CHICKEN MASALA AND MIX.
  33. ADD WATER IF REQUIRED AND GIVE A BOIL AND COOK UNTIL DESIRED CONSISTENCY. YOUR GRAVY IS EVEN READY.
