ABOUT Chettinad Chicken Curry RECIPE

One of the most popular spicy and flavourful chicken curry comes from Chettinad. Its also one of my favourite chicken curry

Ingredients Serving: 5

  1. 500g curry cut chicken
  2. 2 big onions thinly sliced
  3. 2 tomatoes chopped
  4. 3 tbsp chopped coriander leaves
  5. 1.5 tbsp ginger garlic paste
  6. salt to taste
  7. water as required for the gravy
  8. 1/4 Cup grated coconut
  9. For Marination
  10. 1 tsp turmeric
  11. salt to taste
  12. 2 tbsp lemon juice
  13. Dry Spices:
  14. 3 tbsp coriander seeds
  15. 2 teaspoon fennel seeds
  16. one teaspoon jeera
  17. 4-5 dry red chilli
  18. 5cm cinnamon stick
  19. 2 teaspoon peppercorns
  20. 2 black cardamom seeds
  21. 3 Green cardamom seeds
  22. three black stone flower
  23. 1 star anise
  24. 4 cloves

Instructions

  1. MARINATE CHICKEN WITH SALT, TURMERIC AND LEMON JUICE. SET ASIDE FOR 30 MINUTES TO 1 HOUR
  2. DRY ROAST ALL DRY SPICES UNTIL AROMATIC
  3. DRY ROAST COCONUT UNTIL GOLDEN BROWN
  4. GRIND COCONUT AND DRY SPICES WITH LITTLE WATER TO FORM SMOOTH PASTE. KEEP IT ASIDE
  5. HEAT OIL IN A PAN, SAUTE ONIONS WITH LITTLE SALT UNTIL TENDER
  6. ADD GINGER GARLIC PASTE AND CURRY LEAVES. SAUTE UNTIL RAW AROMA GOES AWAY
  7. ADD CHOPPED TOMATOES AND SAUTE UNTIL TENDER
  8. ADD MARINATED CHICKEN AND MIX WELL
  9. COVER AND COOK UNTIL CHICKEN IS COOKED STIRRING OCCASIONALLY
  10. ADD GROUND PASTE, SALT WITH REQUIRED WATER FOR CONSISTENCY .MIX WELL. BRING TO BOIL
  11. COVER AND SIMMER FOR 10 MINUTES
  12. ADD CORIANDER LEAVES AND MIX WELL
  13. SERVE HOT WITH RICE
