  1. Ridge gourd big sized 1
  2. Onion big sized 2
  3. Garlic cloves 15-18
  4. Water
  5. Salt to taste
  6. Coconut oil 1/4 cup
  7. Jeera 2 tsp
  8. Cashews 5 pieces
  9. Green chilli 1
  10. Turmeric powder a pinch
  11. Tamarind 1 petal
  12. Coconut gratings 1/2 cup
  13. Curry leaves few

Instructions

  1. WASH AND PEEL RIDGE GOURD
  2. CHOP FINELY
  3. ADD SOME WATER AND SALT TO TASTE, BRING IT TO COOK
  4. PEEL GARLIC CLOVES
  5. PEEL ONION
  6. CHOP ONION
  7. HEAT OIL, LET CRACKLE JEERA, ADD GARLIC, FRY TILL GOLDEN BROWN
  8. ADD CASHEWS AND GREEN CHILLI
  9. ADD CHOPPED ONION AND FRY TILL TRANSULANT
  10. TURMERIC POWDER A PINCH
  11. 1 PETAL TAMARIND, HALF PORTION OF FRIED INGREDIENTS
  12. HALF PORTION OF COOKED RIDGE GOURD, COCONUT GRATINGS 1/2 CUP, GRIND SMOOTHLY
  13. ADD COOKED RICE 3 CUPS INTO PAN
  14. ADD COOKED RIDGE GOURD
  15. MIX WELL
  16. ADD GROUND PASTE
  17. MIX WELL IN LOW FLAME
  18. SALT TO TASTE
  19. GARNISH WITH CURRY LEAVES AND SERVE
