Ingredients Serving: 2

  1. Big brinjal 1
  2. Oil 1 tablespoon
  3. Finely chopped onion 1 cup
  4. Finely chopped tomatoes 2 cups
  5. Crushed garlic 1 teaspoon
  6. Hreen chilly chopped 2
  7. Turmeric powder 1/2 teaspoon
  8. Red chilli powder 1 teaspoon
  9. Salt to taste
  10. Chopped coriander leaves for garnishing

Instructions

  1. WASH A BIG BRINJAL AND DRY ROAST ON FLAME TILL COOKED AND SOFT, CHECK BY PRICKING KNIFE
  2. HEAT 1 TABLESPOON OF OIL, ADD FINELY CHOPPED ONION,GINGER , GREEN CHILLIES AND SAUTE UNTIL GOLDEN BROWN AND ADD TURMERIC POWDER AND RED CHILLY POWDER
  3. ADD 2 CUPS FINELY CHOPPED TOMATOES, MIX WELL AND COOK TILL SOFT
  4. REMOVE BURNT PEEL FROM ROASTED BRINJAL
  5. MASH THE COOKED BRINJAL PULP
  6. ADD THE MASHED BRINJAL PULP IN TO SAUTEED MASALA , ADJUST SALT AND MIX WELL
  7. LET IT COOK ON LOW HEAT FOR SOMETIMES AND BENGAN KA BHARTA IS READY TO SERVE
