ABOUT Fruity ravioli RECIPE

Mango ravioli filled with dates, cherry & topped with pomegranate sauce. These raviolis are little pockets of fruity, juicy goodness that we find all too easy to devour.  But this time, the pasta is the sweet finish to the meal, not the savory side dish.

Ingredients Serving: 3

  1. APF 2cups
  2. Oil 2tsp
  3. Ripe Mango 1
  4. Dates 10
  5. Dessicated coconut 1/2cup
  6. Fresh cherry 8-10
  7. Pomogranate 1
  8. Sugar 1 tsp
  9. Lemon juice 1 tsp
  10. Red Chilli powder 1/2tsp
  11. Salt as per taste

Instructions

  1. CUT ONE RIPE MANGO AND PUREE IT.
  2. TAKE A MIXING BOWL, ADD 2CUPS MAIDA,
  3. SALT TO TASTE,
  4. 1TSP OF OIL,
  5. AND 1CUP MANGO PUREE.
  6. MIX WELL AND KNEAD TO MAKE A SOFT DOUGH.
  7. KEEP COVERED TILL REQUIRED.
  8. REMOVE THE SEEDS FROM THE DATES.
  9. PUT IN A BLENDER ALONG WITH 1/2CUP DESSICATED COCONUT.
  10. BLEND FOR FEW SECONDS.
  11. TRANSFER TO A PLATE AND ADD FEW FRESH CHOPPED CHERRIES.
  12. MIX WELL AND KEEP ASIDE.
  13. KNEAD THE DOUGH AGAIN FOR 2MINS.
  14. DIVIDE INTO EQUAL PARTS.
  15. TAKE ONE PART AND ROLL TO A BIG ROTI.
  16. CUT IT WITH THE HELP OF ANY CUTTER.
  17. PLACE THE STUFFING IN THE CENTER OF ONE PART AND COVER WITH ANOTHER.
  18. SEAL ALL THE SIDES WITH THE HELP OF A FORK.
  19. BOIL WATER IN A HEAVY BOTTOMED PAN, ADD 1TSP OIL,
  20. SALT,
  21. ADD ALL THE PREPARED RAVIOLIS.
  22. WHEN THEY FLOAT, TAKE OUT.
  23. PUT IN COLD WATER.
  24. FOR SAUCE, BLEND SEEDS OF ONE POMOGRANATE.
  25. STRAIN THE JUICE.
  26. HEAT A PAN, POUR THE JUICE.
  27. ADD 1 TSP SUGAR,
  28. SALT A PINCH,
  29. 1TSP LEMON JUICE,
  30. MIX WELL.
  31. ADD 1/2TSP CHILLI POWDER.
  32. COOK TILL THE SAUCE THICKENS. SWITCH OFF.
