ABOUT Jackfruit Halwa RECIPE

Very common Indian foods even are the most craved ,longed , highly expensive foods in foreign countries . Only NRIs could understand what I really mean . One such most craved fruit is jackfruit . I reside in Riyadh , the capital of Saudi Arabia . It’s quite easy to find and procure exotic fruits whereas it’s really tough to see or buy few of our Desi fruits . And yeah I am talking about Jackfruit here . Jackfruit is called as Palapazham in Tamil . This is one major fruit that falls under the category Mukkanigal( Most special three fruits ) . Jackfruit Halwa is one traditional dessert from South India . It’s one must have dessert of Kerala . Let’s get started with this delicious , nutritive dessert .

Ingredients Serving: 5

  1. Ripe Jackfruit seedless 40 pieces
  2. Water 100 ml
  3. Corn starch 100 ml
  4. Cardamom powder 1/2 teaspoon
  5. Ghee 6 tablespoons
  6. Palm sugar 3 teaspoons ( adjust based on the fruit ‘s sweetness )
  7. Cashews 20 chopped

Instructions

  1. Firstly , boil the jackfruit pieces in 100 ml water ( along with its juices released while deseeding) .
  2. Don’t over-boil .
  3. Bring the boiled hot mixture to room temperature .
  4. Blend into a smooth purée.
  5. Don’t add any extra liquid while blending .
  6. Heat 1 tablespoon ghee in a wide nonstick pan .
  7. Fry the cashews in the hot ghee and keep them aside .
  8. Pour the ground jackfruit purée to the remaining hot ghee .
  9. Sauté in medium flame till the purée starts firming .
  10. At this stage add corn starch .
  11. Stir continuously ensuring there are no lumps formed .
  12. Add 3 teaspoons sugar . Go easy with the palm sugar if the fruit tastes too sweet .
  13. Keep stirring .
  14. Sugar melts and halwa turns glossy at one point .
  15. Add cardamom powder .
  16. Add ghee gradually while stirring till it attains halwa no sticky one mass consistency .
  17. Finally add roasted cashews .
  18. Drizzle ghee on the hot halwa .
  19. Grease a tray and pour the halwa on the tray .
  20. Cool and cut into desired shapes or serve as it is just by scooping .
  21. Serve and relish halwa warm .
