ABOUT Hariyali paratha RECIPE

Delicious whole wheat and Soya flour flat bread stuffed with moong sprouts and spinach filling make for a good tiffin box snack or lunch

Ingredients Serving: 4

  1. Whole wheat flour 1 cup
  2. Soya flour 1/4 cup
  3. Salt to taste
  4. Oul 1 to 2 table spoon
  5. Water
  6. For stuffing
  7. Sprouted moong 1/2 cup
  8. Spinach finely chopped 1 cup
  9. Green chilli paste 1 teaspoon
  10. Ginger paste 1/2 teaspoon
  11. Salt to taste
  12. Oil 1 teaspoon
  13. Chaat masala 1 1/2 teaspoon
  14. Other ingredients
  15. Ghee for cooking
  16. Whole wheat flour for rolling
  17. For serving
  18. Curd
  19. Tomato ketchup

Instructions

  1. Combine wheat flour, soyabin flour,salt and oil in a deep bowl mix well and knead in to a soft dough using enough water keep aside.
  2. For stuffing Grind sprouted moong coarsely using little water.
  3. Heat the oil in a broad non stick pan .
  4. Add ginger paste , Chilli paste and coarsely grinded moong saute on a medium for 2 minutes.
  5. Then add finely chopped spinach and salt saute on medium heat for 10 minutes till water gets evaporate.
  6. Then add Chaat masala mix well.
  7. Allow the mixture to cool completely and divide in to a 4 equal portions keep aside.
  8. Divide the dough in to a 4 equal portions.
  9. Roll a portion of the dough into a small circle.
  10. Place a portion of the stuffing in the centre of the circle.
  11. Bring together all the sides in the centre and seal tightly.
  12. Roll again into big circle using little wheat flour for rolling.
  13. Heat a tava and cook the paratha using ghee till golden brown spots appear on both the side.
  14. Repeat the same steps to make more paratha.
