ABOUT Ariselu RECIPE

Ariselu is one of the traditional south Indian desserts which involves tedious process in its making and they break quiet easily while frying. My super mom whips her magic wand and makes them Just perfect each and every time leaving everyone spell bound. Country : Ireland

Ingredients Serving: 10

  1. 3 cups or 600 gm : Raw Rice
  2. 2 cups or 300 gm : Jaggery
  3. 1/4 cup : Ghee or clarified butter
  4. 50 ml : water
  5. 2 tbsp : Sesame or Poppy seeds
  6. 2 tsp : Cardamom powder
  7. Oil for Deep frying

Instructions

  1. Prepare the flour : Wash the rice a couple of times until water runs out clear.
  2. Soak the rice in enough water overnight.
  3. Rinse the soaked rice and drain out the water completely. Rest over the colander for 20 minutes or so until every drop drains out.
  4. Later dry the rice over a clean cotton cloth under shade.
  5. When the rice is dry to touch grind it to a fine powder in a blender or get it milled at flour mill preferably.
  6. Sieve the flour a couple of times and discard any bits and lumps. Set ready aside until needed.
  7. Jaggery syrup : Add the jaggery and water to a deep pan.Bring it to a boil.
  8. Once it boils for few minutes spoon out a spoonful of syrup to a bowl of water if the jaggery syrup dissolves in water boil it further more , if the jaggery syrup forms a soft ball when rolled between fingers without melting then the syrup is done.
  9. Add the cardamom powder and ghee to the prepared syrup.Turn off the heat.
  10. Prepare the dough : To the prepared jaggery syrup keep adding the sieved rice flour little at a time and knead to form a soft pliable dough similar to chapati dough.
  11. Once the dough is prepared start heating up oil in a flat pan for deep frying.
  12. Grease a sheet of plastic or parchment paper with oil. Pinch out a ball sized dough and pat into a round disc with greased fingers.
  13. Sprinkle few sesame or poppy seeds and slightly pat again so that the seeds stick to the flattened disc.
  14. Slowly lift the shaped and add it to the moderately hot oil, along the edges of the pan.
  15. Wait until it floats on top and slowly invert to cook on the other side.
  16. Once it turns brown in colour on both the sides take it on to a slotted spoon and slightly press with a flat spoon.
  17. This helps in removing excess oil absorbed by the "Arise".
  18. Place it on a lined plate and repeat with shaping and frying remaining dough.
  19. Crisp on the outside and soft mouth melting insides makes all the effort worth it.
  20. Tasty and delicious south Indian Ariselu, my mom's way.

Reminds me of my childhood. My grandmother used to make this.
