Ingredients Serving: 5

  1. All Purpose Flour 1 Cup
  2. Corn Flour 2 tbsp
  3. Unsalted Butter 113 gms
  4. Confectioners Sugar/Icing Sugar 1/4 Cup + 2 tbsp
  5. Vanilla Extract 1/2 tsp

Instructions

  1. Unsalted butter should be at room temperature. ​In a large bowl, add softened unsalted butter and 1/4 cup and 2 tablespoons of confectioners sugar.
  2. Beat the butter and sugar till the batter becomes fluffy. The butter should be fluffy and light, and very smooth when spread with a spatula.
  3. Add 1/2 teaspoon of vanilla extract to the batter. Mix it well. Add two tablespoons of cornflour. Mix it well with butter using a spatula.
  4. Add all purpose flour. Mix it well with butter using a spatula till no streaks of flour is left. Don’t knead the dough too much. Align the baking tray with parchment paper.
  5. Bake at 180C for 10-14 minutes. Keep the baked cookies on a cooling rack for sometime before you store it in air tight container.
