It’s summer . Time for melons . And I am always in love with these orange melons . Bored relishing melons in milkshakes , salads , that’s how hot a thought to try my hands on this halwa . Nutritious , delectable halwa in simple steps . What else ? Slurp :grinning:
Yummilicious.
Clean , remove the skin , discard the seeds and cut melon into cubes .
Give a quick pulse in the blender without adding any liquid .
Needn’t blend too smooth .
Let there be few chunky pieces .
In a deep heavy based wok , add the grated jaggery .
Pour water to immerse jaggery and to dissolve jaggery completely .
Stir and melt jaggery .
Filter the jaggery syrup at this stage . This step is optional .
Now add the ground cantaloupe purée .
Stir and cook till water is drained considerably .
Cook for another few minutes till the cantaloupe purée firms .
At this stage , keep adding ghee gradually while stirring to form halwa consistency .
Add cardamom powder .
At one point , the halwa becomes one mass without sticking to sides .
Gives out ghee .
Halwa is done .
Allow the hot halwa come down to warm .
Garnish with sliced almonds .
Serve and relish !
