ABOUT Restaurent Biryani Gravy Onion Salan RECIPE

Onion Salan or the Restaurant Biryani gravy onion salan is commonly known as Hyderabadi Biryani Sauce/Salan. This is a very popular gravy based preparation accompanied with the scrumptious and wholesome Hyderabadi Chicken biryani or Mutton biryani. The onion salan is mildly spiced gravy made with an amalgamation of roasted peanuts, sesame seeds, and dry coconut, made into a smooth paste and cooked with spices; lightly sautéed onions added in with little tamarind juice to give that extra punch.This combination of food is a traditional Hyderabadi dish prepared in wedding and special occasions especially most Muslim homes.

Ingredients Serving: 5

  1. We need 5 whole spices:
  2. 1.Peanuts_4tsp
  3. 2.Coriander seeds_2tsp
  4. 3.Cumin seeds_ 1 tsp
  5. 4. Sesame seeds _2tbsp
  6. 5. Dry Whole Red Chili Peppers_3
  7. For Salan, we need:
  8. 1.Onion 10 (small sized)
  9. 2. Ginger Garlic Paste_2tsp
  10. 3. Onion paste of 2 onions
  11. 4. Black Mustard Seeds_1tsp
  12. 5. Fenugreek Seeds_1tsp
  13. 6. Curry Leaves
  14. 7.Salt to taste
  15. 8. Turmeric Powder_1/4 tsp
  16. 9. Tamarind Pulp _2 tsp
  17. 10. Oil 2tbsp
  18. 11.Desicated coconut _1tbsp

Instructions

  1. Dry roast all the 5 whole spices add desicated coconut and then grind in a grinder to make powder.
  2. Now heat oil in a kadahi and crackle black mustard seeds, fenugreek seeds and curry leaves in it.
  3. Then add ginger garlic paste and onion paste in it. Roast it on medium flame until golden brown.
  4. Now add salt, turmeric powder and spices powder. Mix it well and cook on low flame for 5 minutes.
  5. When oil starts to separate; then add water, tamarind pulp and whole onions in it.
  6. Cover it with lid and cook it until onions become soft.
  7. Delicious Pyaj ka Saalan is ready to serve hot with Roti and other Indian breads.
