AlBaik is a major fast food restaurant chain in Saudi Arabia . AlBaik is known for their unique Broasted chicken and shrimps with various sauces . Their Broasted chicken is world famous , driving people across the world towards this major chain . It’s my favourite as well and this recipe is 99% closer to AlBaik chicken Broast.

Ingredients Serving: 10

  1. Whole chicken cut into big pieces with skin 1.5 kilogram
  2. Salt 2 teaspoons
  3. Ginger garlic paste 2 teaspoons
  4. Red chilli powder 1 teaspoon
  5. Sumac 1 teaspoon
  6. Sriracha hot sauce 1 tablespoon
  7. Paprika 1 tablespoon
  8. Plain yogurt 2 tablespoons
  9. Sugar 1 teaspoon
  10. Oregano 1 teaspoon
  11. Ingredients for first coating :
  12. All purpose flour 4 cups
  13. Salt 1/4 teaspoon
  14. Ingredients for second coating :
  15. All purpose flour 4 cups
  16. Japanese bread crumbs / regular bread crumbs 1 cup
  17. Baking powder 1/2 teaspoon
  18. Salt 1/2 teaspoon
  19. Milk 4 cups
  20. Red chilli powder 1/2 teaspoon
  21. Oil for deep frying .

Instructions

  1. Wash the chicken thoroughly . Keep the chicken totally pat-dried .
  2. Marinate the chicken with 2 tablespoons salt , ginger garlic paste , 1 teaspoon red chilli powder , 1 teaspoon sumac , 1 tablespoon sriracha hot sauce .
  3. 1 tablespoon paprika , yogurt , oregano , sugar .
  4. Mix all together using your hands .
  5. Marinate . Refrigerate the chicken for 6 hours / overnight for best results .
  6. In a regular pan / idli pan , add 2 cups water . Place a round wire / idli plates .
  7. Place the marinated chicken pieces and steam them for 10 minutes by covering the pan .
  8. Steam the chicken for even cooking and better Masala absorption reasons . Even frying becomes easy and quick . Steaming stops blood oozing from chicken pieces and takes away unpleasant odour from the chicken pieces .
  9. Meantime , while the chicken is getting steamed , prepare for the last coating .
  10. Mix 4 cups all purpose flour , 1 cup bread crumbs , 1/2 teaspoon baking powder , 1/2 tablespoon salt , 1/2 tablespoon red chilli powder .
  11. In another container , mix flour and salt for first coating .
  12. Now , cool the steamed chicken . Needn’t cook completely but shouldn’t be hot .
  13. Start coating .
  14. Cover the chicken with first coating mixture .
  15. keep the coated chicken pieces aside for 5 minutes .
  16. Now , we need 4 cups milk .
  17. Dip the coated chicken in milk and do last flour coating .
  18. Similarly , do double coating . Dip the chicken again into milk and last flour coating .
  19. Keep it aside for 5 minutes.
  20. Heat the oil in a wok .
  21. Make sure the oil is hot and then drop the coated chicken pieces one by one in the hot oil .
  22. Fry the chicken pieces for 6-8 minutes . Do not overcrowd and fry in batches .
  23. Remove excess oil and serve hot hot with hummus / sauces / garlic mayo. Serve with French fries and burger buns to bring the authentic AlBaik effect at home .
  24. AlBaik style Broasted chicken is ready .
