Red cabbages are rich in antioxidants than regular cabbages . It’s detoxification properties can enhance immune system health when regularly eating red cabbage. So , this soup is totally an healthy version . This soup tastes yum .

Ingredients Serving: 4

  1. Red cabbage 600 grams thinly sliced
  2. I small sized onion finely chopped
  3. Garlic cloves 4 finely chopped
  4. 1 medium sized potato skin peeled and diced .
  5. extra virgin olive oil 2 tablespoons
  6. Milk 100 ml
  7. vegetable stock / water 1 litre .
  8. Salt as taste
  9. Freshly ground black pepper as per taste .

Instructions

  1. In a wide sauce pan , heat olive oil in moderate heat .
  2. Add garlic cloves and fry them gently . Don’t turn them Brown.
  3. Add finely chopped onions and sauté them till translucent .
  4. Add the sliced red cabbage. Sauté gently for a minute .
  5. Add the vegetable stock / water .
  6. Add salt .
  7. Cover the pan and cook for 3 minutes . Don’t overcook .
  8. Remove from the heat .
  9. Add milk .
  10. Cool the mixture and blend into a smooth soup .
  11. Transfer the soup into the serving bowls .
  12. Add freshly ground black pepper before serving .
  13. Serve warm .
