ABOUT Eggless Basbousa RECIPE

Basbousa is a traditional Middle eastern sweet cake made from semolina and then soaked in lemon and rose water syrup.Also known as Hareesa in Arabic and Revani in Turkish.Perfect cake to be served with tea or coffee.

Ingredients Serving: 10

  1. Semolina 1.5 cups
  2. Sugar 1/2 cup
  3. Dessicated Coconut 3/4 cup
  4. Baking powder 1.5 tsp+1 pinch
  5. Thick fresh curd 3/4 cup
  6. Melted butter 1/3 cup
  7. For the Sugar Syrup:
  8. Sugar 3/4 cup
  9. Water 1/3 cup
  10. Lemon juice 1/2 tsp
  11. rose water 1/2 tsp
  12. Almonds 10

Instructions

  1. First blanch the almonds either in microwave or by soaking in hot water.Peel and cut into halves lengthwise.
  2. Preheat the oven at 180 degrees for 10 minutes.
  3. Take semolina,coconut,baking powder and sugar in a bowl and mix together.
  4. Now in another bowl take melted butter,curd and a pinch of baking powder.
  5. Whisk well.
  6. Now put this wet mix into the dry ingredients.Fold everything together.
  7. Take a greased 6 inch cake mould or glass bowl and put the cake mixture in it.Level it.The batter will be thick.
  8. Now take a knife and cut into square or diamond shape gently.
  9. Put blanched almonds on each piece .
  10. Bake this cake in the preheated oven at 180 degrees for 30 minutes.For browning on top can toast for 2 minutes on grill mode.
  11. While the cake is baking prepare sugar syrup by mixing sugar and water in a bowl.
  12. Boil till sugar dissolves and a sticky syrup is formed.Add lemon juice and rose water .Switch off the gas.
  13. Our basbousa is baked nicely.Now cut again with knife along the preformed lines.
  14. Pour the sugar syrup all over so that it seeps into the cuts and soaks the cake well.
  15. Let it cool and then seperate the pieces to serve with tea or coffee.
