ABOUT Cornmeal Upma RECIPE

Roasted maize flour cooked with vegetables.

Ingredients Serving: 1

  1. Maize flour 1/2 cup
  2. Oil 3 tsp
  3. Asafoetida 1 pinch
  4. Mustard seeds 1/4 tsp
  5. Cumin seeds 1/4 tsp
  6. Curry leaves 5-6
  7. Chopped ginger 1/2 tsp
  8. Chopped green chilli 1
  9. Chopped onion 1
  10. 1/2 cup of chopped vegetables (carrot, cauliflower, peas)
  11. Salt to taste
  12. Chopped coriander 1 tbsp
  13. Lemon juice 1 tbsp
  14. Roasted peanuts 1 tbsp

Instructions

  1. Heat a pan add 1 tsp oil and cornmeal. Roast the cornmeal and take it out in a bowl.
  2. In the same pan, add 2 tsp of oil, asafoetida, mustard seeds, cumin seeds, curry leaves, ginger, green chilli, onion and saute for 2 mins. Now add the mix of vegetables and a little bit of water. Cover the pan and cook for 2 mins.
  3. Open the lid, add 1 cup of water and salt. Let it boil, add the cornmeal and stir well.
  4. Then add coriander leaves, crushed roasted peanuts and lime juice.
  5. Serve it hot.
