ABOUT Badami Firni... RECIPE

A quintessentially Indian dessert par excellence loved and made all over in Northern parts on every special occasions, festivals and weddings. This is basically served chilled in earthern pots called 'Shikoras'. Firni is made raw rice dried and powdered, thickened cooking in milk. Enjoy this super extravagant dessert as an afterschool snack just as we did during our good old school days. It is a dessert cum anytime snack, plus a perfect brunch idea too.

Ingredients Serving: 5

  1. Raw rice 1 cup
  2. Full fat milk 1 1/2 litres
  3. Sugar 3/4th cup
  4. Cardamom powder 1 tsp
  5. Almonds 1/4th cup
  6. Fresh cream 1/4th cup
  7. Almonds slivered 3 tbsp
  8. Pistachios slivered 3 tbsp

Instructions

  1. Soak rice in water for an hour.
  2. Allow it to dry under the fan spreading it well.
  3. Grind this to a coarse powder.
  4. Soak almonds in hot water.
  5. Remove the skin and blend it into a paste and keep aside.
  6. Add powdered rice to milk and mix well.
  7. Now allow it to cook on a high heat at first.
  8. As soon as the milk comes to a rolling boil, lower the heat and simmer.
  9. Keep stirring it at regular intervals.
  10. Add cardamom pwder,sugar and fresh cream too after 15 minutes of simmering.
  11. As soon as it starts thickening, add the almond paste.
  12. Mix well and simmer until it reaches your desired thickness or consistency.
  13. Add slivered nuts and serve it chilled.
