Ingredients Serving: 4

  1. Wahsed and Soaked Quinoa 1 cup
  2. Capsicum 2 to 3
  3. Finely chopped mixed veggies like onion, green peas and baby corns 1 cup
  4. Boiled and mashed potato 2
  5. Garam masala 1/2 teaspoon
  6. Turmeric powder 1/4th teaspoon
  7. Red chilly powder 1/2 teaspoon
  8. Salt to taste
  9. Gtated chesse 1 to 2 tablespoon ( optional)

Instructions

  1. Cook Quinoa covered for 15 to 20 minutes , stirring and check in between . Let it cool for some time.
  2. In a mixing bowl take cooked Quinoa, mashed potatoes , all the spices , finely chopped mixed Veggies and salt to taste . Mix well everything and prepare stuffing
  3. Cut Capsicum length wise in to two equal halves
  4. Stuff Capsicum with ready stuffing by pressing gently
  5. Cover it with lots of cheese
  6. By the time Preheat oven for 200 degrees and place stuffed Capsicum in oven proof dish
  7. Bake it for 15 to 20 minutes on 180 degrees ..
  8. Enjoy endlessly with family and friends
