ABOUT Dum aloo curry RECIPE

Dum aloo is one vegetable which is loved by one and all,it is rich,creamy and spicy.it is very simple to prepare and tastes delicious.my children love this dish with chapati and all flavored rice.

Ingredients Serving: 5

  1. 250 gm baby potatoes
  2. 1 cup oil or as needed for frying
  3. 1 cup cubed onions
  4. 2 tomatoes chopped cube
  5. 10 cashew nuts
  6. 2 tbsp oil
  7. 1 bay leaf
  8. 2 green cardamom
  9. 2 green chilli chopped
  10. 1 tsp ginger garlic paste
  11. 1/2 tsp garam masala
  12. 1 tsp kashmiri chilli pwr
  13. Salt as needed
  14. 1/4 tsp turmeric pwr
  15. 2 tbsp thick curd ( do not use sour one)
  16. 1 tsp kasuri methi
  17. 1/2 cup milk
  18. 2 tbsp malai
  19. 1 tbsp chopped coriender leaves

Instructions

  1. pressure cook 8 baby potatoes with 2 cups of water and salt. pressure cook for 1-2 whistle.
  2. once pressure releases, allow the potatoes to cool. then peal off the skin from the potatoes.
  3. poke all over the potatoes well with fork.
  4. in a large kadai, add 1 cup of oil. saute till they turn golden brown. approx. 3-5 minutes.
  5. then keep the fried aloos aside.
  6. Masala paste/ gravy: Add cubed onions,tomatoes green chilli and cashews to a blender jar.
  7. Make a smooth paste.
  8. Heat the kadhi with 2 tbsp oil.add bay leaf & cardamon .saute just for a mins.
  9. Add ginger garlic paste paste and green chilli .saute just for a 5 mins.
  10. Add the ground paste.
  11. Saute until the paste thickness and raw smell goes away.
  12. Add salt,turmeric,red chilli pwr,garam masala
  13. Saute for 5 mins.
  14. Add curd saute just for a 5 mins
  15. Add milk and malai
  16. Saute until the paste begins to leave the sides of the pan
  17. Add the fried potatoes
  18. Bring the gravy to a boil.cover and cook on a very low flame for 5 mins
  19. Add kasuri methi.
  20. Cook for just a minute.switch off.
  21. Transfer to a serving bowl.serve with plane paratha rice.
