This hot spicy n tangy sezwan sauce balances sweetness of sweet potato.

Ingredients Serving: 4

  1. 4 large sweet potaatoes
  2. 2 Tbsp Cornflour
  3. Salt and pepper to taste
  4. For schezwan sauce
  5. 2 tbsp.oil
  6. 1 tbsp chopped garlic
  7. 2 white part of spring onion.finely chopped
  8. 1/2 cup tomato puree homemade
  9. 2 tbsp tomato.sauce
  10. 6 red .chilli soaked in.hot water n.grounded
  11. 1 tbsp.vinegar
  12. Salt n.pepper to.taste
  13. Coriander leaves for garnishing

Instructions

  1. Peel.sweet potato.and cut in shape.of fries
  2. Par boil with salt
  3. Cool.it and coat with salt pepper n.corn.flour
  4. For schezwan .sauce Heat a sauce . Add oil to it .Let it heat, then.add chopped garlic and.onion
  5. Cook for few mins then.add home made tomato.puree , tomato sauce and red chilli paste
  6. Add salt and pepper and cook on low flame for 15 mins
  7. Add vinegar and finish.it off by adding sugar if required to balance taste
  8. Now deep fry cornflour coated sweet.potato.
  9. Now in a pan coat these fries with sezwan sauce
