ABOUT Subz Bahaar Idli RECIPE

A dish of rawa idli fried with vegetables.

Ingredients Serving: 4

  1. Rawa 250 gms
  2. Chana dal 1 tbsp
  3. Mustard seeds 1 tsp
  4. Curd 1 cup
  5. Salt 1 tsp
  6. Eno 1 sachet
  7. Curry leaves 8-10
  8. Mixed vegetables 2 cups
  9. Chopped capsicum 1/2 cup
  10. Chopped carrots 1/2 cup
  11. Chopped tomatoes 1/2 cup
  12. Chopped onions 1/2 cup
  13. Kishmish 1 tbsp
  14. Cashew nuts 1 tbsp

Instructions

  1. Heat some oil in a wok and add half of the mustard seeds. When the seeds splutter, add curry leaves and chana dal and roast until the dal becomes brown in colour.
  2. Add curd to the rawa and mix in salt and the prepared dal mixture to it. Let it rest for 15 minutes.
  3. Add the eno and mix it immediately to make the idlis. It will take about 25 minutes for the idlis to be done. Take them out of the idli cooker and let them cool.
  4. Meanwhile heat some oil in a wok and add the remaining mustard seeds. When they start spluttering, add the chopped vegetables, salt and let the vegetables cook.
  5. Ciu the idlis in 4 pieces and add them to the cooked vegetables and mix properly. Let the idli mix with the vegetables properly.
  6. Now add 1 tbsp of white vinegar and 1 tbsp of tomato ketchup to it.
  7. Garnish with green coriander and serve it hot with coconut chutney or green chutney.
