ABOUT Jackfruit Kebaab RECIPE

This is a recipe of delicious appetizer , a lucknowi kabab made with jackfruit.

Ingredients Serving: 4

  1. Jackfruit 250 grams
  2. Fine chopped onions 2
  3. Gram dal 1cup { soaked for 3hrs}
  4. Fine chopped corriander leaves 2 tablespoon
  5. Mint leaves 1 tablespoon
  6. Fine chopped green chillies 5
  7. Gratted Ginger 1 tablespoon
  8. Garam masala 1 tablespoon
  9. Corriander powder 1 tablespoon
  10. Red chilly powder 1 teaspoon
  11. Cumin seeds 1 teaspoon
  12. Cloves 10
  13. Black pepper 10-12
  14. Black cardamom 4
  15. Green cardamom 2
  16. Fine chopped garlic 4-5
  17. Cinnamon stick ½ inch
  18. Roasted cumin powder 1 teaspoon
  19. Poppy seeds 1 teaspoon
  20. Mace 1 small piece
  21. Oil for frying
  22. Salt to taste

Instructions

  1. In a pressure cooker heat oil and crackle seeds and add gram dal and little salt and give 3-4 whistles.
  2. Dry roast cloves, black pepper, black cardamom, green cardamom, cinnamon stick, cumin seeds, mace and poppy seeds.
  3. Grind all these dry roasted spices and make a powder. Then grind the dal along with other left ingredients.
  4. Take garlic, chillies, ½ onion and grind those and keep them aside
  5. In a bowl add grinded jackfruit, dal, dry roasted spices, corriander leaves, mint leaves, chopped onion and required salt and mix them well.
  6. Grease palms and faltten the dough. On a non stick pan on a low flame cook the kebaabs.
  7. Your kebbas are now ready, serve them hot with mint chutney, corriander tomato chutney and rumali roti.
