Ingredients Serving: 4
For bhature:
Whole wheat flour 1+ 1/2 cup
Refined flour 1/2 cup
Boiled potatoes 2 and mashed
Salt to taste
Kasoori methi 2 tablespoon
Ghee 2 tablespoon
Curd 3 tablespoon
Baking soda 1/4 teaspoon
Carrom seeds 1 teaspoon
Water for kneading
Oil for frying
For chole:
Kabuli chana 1 cup soaked overnight
Salt to taste
Turmeric powder 1 teaspoon
Red chilli powder 2 tablespoon
Chana masala 2 tablespoon
Asfetoida 1/4 teaspoon
Cumin seeds 2 tablespoon
Dry mango powder 2 tablespoon
Bay leaves 2
Black caradamom 1
Green cardamom 2
Cloves 4
Mace 2 pieces
Cinnamon 1 stick
Onion 2 chopped
Ginger 2 tablespoon chopped
Ginger julliens 2 tablespoon
Garlic 2 tablespoon chopped
Tomato puree of 3 tomatoes
Coriander leaves
Mustard oil 3 tablespoon
Instructions
For bhature mix all dry ingredients except baking soda.
Add boiled potatoes. Mix well.
Now make a hole in centre and add baking soda and curd. Mix well. And make a smooth dough.
Set aside covered for 2 hours.
Now add chole to a pressure cooker and add 4 cup water . Add salt, turmeric powder, pomegranate peels, caradamom, cinnamon sticks, clives ,mace,. And pressure cook for 6 whisles.
Add mustard oil in another pan smoke it and bay leaves, cumin seeds, asfetoida. Add chopped garlic, ginger and onion. Saute it till it becomes golden brown.
Add tomato puree and saute it till oil seprates.
Add coriander powder, dry mango powder, red chili powder, chole masala. And saute it. Add boiled chickpeas to it. Remove pomegranate peels.
Cook for 15 minutes on low flame. Add slitted green chillies and ginger julliens. Your chole is ready.
Now heat oil in a wok. Knead again with greasy hands the dough. Make balls from dough.
Roll it with roller pin. Fry it in hot oil.
Fry from both sides till it crispy.
Make all bhaturas in same way. Serve with chole.
