ABOUT Brocoli soup RECIPE

It is simple soup packed with nutrients. I use vegetables stock which i made from leftovers of raw vegetables.

Ingredients Serving: 4

  1. Brocoli 1 piece chopped finely
  2. Onion 1 chopped
  3. Garlic 4 pods
  4. Salt to taste
  5. Black pepper powder 1 teaspoon
  6. Oil 2 tablespoon
  7. Soya sauce 1 tablespoon
  8. Vegetable stock 3 cup
  9. Butter 2 tablespoon

Instructions

  1. Add oil to a pan add chopped garlic and onion and saute it. After 4 minutes add chopped brocoli. Saute it for 5 minutes.
  2. Cover lid till brocoli is tender. When it is tender add vegetables stock and soya sauce.
  3. Mix well and let it boil for 8 minutes. Add salt and black pepper.
  4. Let it cool for some time. Put this in mixer and make puree of it.
  5. Heat butter in pan and add mixture of soup. Boil it.
  6. Serve in bowl. Garnish with chopped coriander leaves. Your brocoli soup is ready.
