ABOUT Jaggery and carrot rice RECIPE

It is authentic receipe of my mom and nani. It is a flavour ful rice which is loved by everyone. It has carrots, jaggery and lots of nuts. All are good for health. Power pack of nutrition.

Ingredients Serving: 4

  1. 2 cup rice( soaked)
  2. Jaggery 300 gm or to taste
  3. Carrots grated 4
  4. Sugar 1/2 cup
  5. Green caradamom 4
  6. Cloves 2
  7. Black caradamom 2
  8. Aniseed 2 teaspoon
  9. Almonds 10 chopped
  10. Raisins 15
  11. Dates 10 Chopped
  12. Cashews 10 chopped
  13. Ghee 4 tablespoon
  14. Water 4 cup

Instructions

  1. Put water into a pan and when it is hot add jaggery and make syrup.
  2. Add ghee in a pressure cooker and add almond, cashews, and raisins. Fry them and remove in a bowl.
  3. Now in this ghee add green and black caradamom, aniseed and cloves. Roast them .
  4. Add carrots and fry them for 5 minutes and stir constantly.
  5. After this add rice and saute it. Few minutes later add jaggery syrup and dates. mix well. Add fried nuts .mix well. Add sugar and mix well.
  6. Close the lid and cook till three whistle. Open the lid garnish it with chopped nuts . Your carrot jaggery rice is ready to serve.
