Made with milk instead of water, this sooji halwa or rava kesari is as delicious and comforting.

Ingredients Serving: 8

  1. 1 cup semolina or sooji
  2. 3 cups milk
  3. 1 cup sugar
  4. 6 tbsp ghee
  5. 10-15 saffron strands
  6. 1/4 cup cashews
  7. 2 tbsp raisins

Instructions

  1. Add milk , sugar and saffron strands in a pan and let it come to boil on medium flame.
  2. Heat ghee in a wok and add cashews and sauté for a while.
  3. Add semolina and sauté it till golden , approximately 6-7 mins.
  4. Add raisins and sauté for a while.
  5. Add the boiled milk slowly in the semolina with continuous stirring to avoids any lumps.
  6. Keep on low flame covered for 2-3 mins.
  7. Switch off the gas and serve hot.
