Ingredients Serving: 4

  1. Snake gourd -1 large cut into juliennes
  2. Curry leaves a sprig
  3. Salt to taste
  4. For_The_Batter‬
  5. Gram flour (besan/kadala maavu)3 tbsp
  6. Rice flour -1 tbsp
  7. Corn flour -1 tbsp
  8. Garam masala -1spn
  9. Chat masala-1spn
  10. Ginger garlic paste-1 spn
  11. Chili powder -1 tsp
  12. Hing a small pinch
  13. Lemon juice-3drops
  14. Salt - to taste
  15. Water - 2 tbsp
  16. Oil - for frying

Instructions

  1. Sprinkle a little salt on the cut gourd pieces and let rest for 5 mins.
  2. After that, squeeze out as much water as you can from the gourd.
  3. In a mixing bowl, combine all the ingredients for the batter except water using a whisk. Now add the snake gourd into this and combine well in such a way that the flour mixture coats the gourd well.
  4. Sprinkle about 1 tbsp of water on the mixture and mix. You should not have a runny mixture.
  5. Check for seasoning and adjust if required. Heat oil in a pan.
  6. Deep fry the gourd pieces in till golden brown. Drain on a kitchen towel. In the end, fry the curry leaves and mix with the gourd. Add some onion too.
