Ingredients Serving: 4

  1. Small size eggplant/baingan - 1 cup
  2. Finely chopped spinach/palak - 2 cup
  3. Grated ginger - 1 inch stick
  4. Finely chopped garlic - 3 cloves
  5. Cumin seeds/jeera - 1/4 tsp C
  6. Curry leaves - 8 - 10
  7. Coriander powder - 1 tsp
  8. Red chilly powder - 1/2 tsp
  9. Asafoetida - a pinch
  10. Salt - to taste
  11. Oil - 2 tbsp

Instructions

  1. Heat oil i n a pan.
  2. Add spinach and a pinch salt.
  3. Cook in a low flame for 2 - 3 mins. and remove from the pan.
  4. Again heat oil in the same pan.
  5. Add cumin seeds and curry leaves to crackle.
  6. Add ginger,garlic,eggplant and a pinch of salt and mix well.
  7. Cover it and cook in a low flame for five mins.
  8. Add coriander powder,red chilly powder ans asafoetida and mix well.
  9. Add cooked spinach and mix well.
  10. Adjust the salt.
  11. Serve hot with rice or chapati
