Well maximum Indian households enjoy the simple besan Ka chilla for their regular breakfast, I also do but then I love to fusion my food. So I have actually made pancakes using the regular chilla masala and infused my flavours to make it more delectable

Ingredients Serving: 4

  1. INGREDIENTS FOR PANCAKES
  2. 2 cups besan
  3. 1 tsp mustard oil
  4. Pinch of hing
  5. 1 tsp Achari masala
  6. 1 tsp jeera
  7. 1/2 tsp haldi powder
  8. 1/2 tsp baking powder
  9. 1/4 baking soda
  10. Salt to taste
  11. Water to make batter
  12. INGREDIENTS FOR ONION PICKLE
  13. 4 onions moon shape sliced
  14. 1 cup vinegar
  15. 2 tbsp sugar powder
  16. 1/2 tsp degi mirch powder
  17. 1 green chilly slit
  18. 1/2 cup water
  19. INGREDIENTS FOR SAUNTH
  20. 25 gms tamarind
  21. 200 gms sugar
  22. 1 tbsp bhuna jeera powder
  23. 1 tbsp degi mirch powder
  24. 1 tsp saunf powder
  25. 1 tsp dry ginger powder
  26. 1 tsp Kala namak
  27. Pinch of hing
  28. Water as required

Instructions

  1. Take all the chilla pancake ingredients and mix dry first, now slowly add water to make a thick but running batter and keep aside
  2. Take all the ingredients for pickling onions in a jar, mix and keep it in sun for 45 mins to attain pickling and still retain crunchiness
  3. In a pan add 2 cups water and tamarind and boil for 15 mins, cool and strain all the pulp in a pan, now add sugar and all the other ingredients and bring to boil, slow down the heat and cook till thick, do add water if required It takes up-to an hour to cook the meethi saunth.
  4. Now take a non stick Tawa or pan, rub some butter and with the ladle add 1 ladle to the Tawa or pan and let it cook on a slow heat for 3 minutes on each side till they are cooked and fluffy
  5. Enjoy this delectable breakfast to start a tangy and blissful day
