ABOUT Tangy Tomato Pasta/Red Pasta... RECIPE

An easy peasy Indian breakfast recipe that suits our Indian palate very well. This is made with blanched tomatoes and few Indian spices and is a perfect breakfast idea on any given day. Kids will absolutely love this and hence it can be a fabulous brunch idea too.

Ingredients Serving: 6

  1. Pasta 500 gm
  2. Tomatoes fresh and soft 6-7
  3. Onions sliced thinly 2
  4. Red chilli powder 1 tbsp
  5. Cumin powder 1 tsp
  6. Garam masala 1 tsp
  7. Capsicum red ones sliced thinly 2
  8. Coriander leaves chopped 1/4th cup
  9. Parsley chopped 1/4th cup
  10. Oil 3 tbsp
  11. Chilli garlic sauce 1 tbsp
  12. Garlic mince 1 tbsp

Instructions

  1. Boil pasta with little salt and a teaspoon of oil.
  2. Drain and keep aside.
  3. Bring water to a rolling boil.
  4. Take it off the gas.
  5. Add tomatoes to it and cover for about 10 minutes.
  6. Peel the skin and mash them slightly and set aside.
  7. Heat oil in a cooking pot and saute the mince garlic first.
  8. Add the onions to the pot now and saute until translucent.
  9. Saute the sliced capsicum now.
  10. Now add cumin powder and chilli garlic sauce.
  11. Add the mashed tomato pulp and mix well.
  12. Finally add the boiled pasta and toss.
  13. Garnish with parsley and coriander.
  14. Serve hot immediately.
