ABOUT Aappam RECIPE

A light yet tasty South Indian breakfast. Porous and spongy. Best side dishes for aappam are sweetened coconut milk, vegetable stew.

Ingredients Serving: 4

  1. Raw rice 2 cups
  2. Idli rice 1 cup
  3. Thick beaten rice 1 cup
  4. Urad dal 1/4 cup
  5. Fenugreek seeds 1 teaspoon
  6. Salt to taste

Instructions

  1. Wash urad dal and soak it in water 4 hours.
  2. Take raw rice, idli rice, thick beaten rice, fenugreek seeds in a vessel.
  3. Wash the rice varieties with fenugreek seeds and soak it in water for 4 hours.
  4. After 4 hours drain the excess water from urad dal.
  5. Start grinding the urad dal in the grinder by sprikling water little by little.
  6. Once urad dal is ground smooth remove it to a vessel.
  7. Now drain excess water from soaked rice.
  8. Start grinding the rice by adding enough water.
  9. Once rice is smooth remove it to the same vessel of urad dal.
  10. Add salt to taste and mix the batter well.
  11. Cover and keep the batter for fermentation for 8 hours or overnight.
  12. Next day when batter is fermented well, take needed batter in a separate vessel.
  13. Add little water to make it slightly thin batter.
  14. Heat the aappam pan(a deep kadai like pan).
  15. Pour a laddle of batter in the pan.
  16. Hold the handle of the pan and rotate the pan clockwise.
  17. Cover the pan and cook on low to medium heat for 3 mins.
  18. Remove from pan and serve hot.

Can I use the regular non stick kadhai? I don't hv the special pan!
