Lasagna sheet is cooked and layered with spinach, white sauce and cheese and then baked to perfection.

Spinach 1 bunch
Butter 100 gms
Garlic 100 gms
Shallots 200 gms
Black pepper (crushed) as per taste

Olive oil 1 tablespoon
Cottage cheese 50 gms
Amul cheese 50 gms
Thyme1 sprig
Basil 1 sprig
Rosemary 1 sprig
For white sauce (Bechamel sauce)
Butter 100 gms
Flour 100 gms
Milk 4 cups
Salt as per taste
Nutmeg powder 1/4 tsp
Pepper as per taste
Bayleaf 1
Cloves 2

Instructions
Take a pan heat butter, add flour to it and mix till it attains a sandy consistency. Add milk which is flavoured with an onion studded with cloves and a bay leaf.
Whisk it till it gets a creamy texture and add the seasoning. Keep aside.
Take another pan, add butter and a little olive oil. Add chopped garlic, shallots, thyme, rosemary and basil. Finally add the cheese and add the seasonings.
Add the lasagna sheet in a hot boiling water and add little olive oil to it. When it is Al dente put it under running cold water for a few minutes.
In a square bowl, layer the lasagna sheet followed by spinach mixture then the white sauce and then some cheese. You should have at least 4 layers and finally on top grate the mozzarella cheese on it.
Bake at 180 degree centigrade for 1 hour or till the cheese on top turns golden brown.
